The grapes are harvested in late September and early October. Fermentation: the grapes are pressed in whole bunches in a pneumatic press, the wine must settle for 12 hours at 12–15 oC in special spacious containers. The fermentation process lasts 15 days in stainless steel tanks, 100% malolactic fermentation is applied. The wines mature by fermentation in stainless steel containers for 4–6 months. Betonite is used for settling the wine and gentle filtration used before bottling.
